- Chicken Sambiquira (or drumstick)250 g
- Chicken breast250 g
- Water1500 ml
- Crushed garlic (cloves)2 unit(s)
- Chopped small onion1 unit(s)
- Chopped ripe tomato1 unit(s)
- Girl's Finger Pepper1/2 unit(s)
- Branch of lovage (spice similar to galinga broth)1 unit(s)
- Grated carrot (coarse grated)1 unit(s)
- Medium English Potato1 unit(s)
- White rice1 cup
- Chopped Parsley to taste
- Salt to taste
- Vegetable oil2 tablespoon
- Sear the sambiquira (or on the thigh) and the cubed chicken breast in the pressure cooker, until golden brown. Sauté the onion and garlic, add the tomato and the girl's finger pepper and sauté until the tomato melts. Season with salt to taste.
- Add 500 mls of water and the levistic seasoning, close the pressure cooker and cook for 10 minutes after the pot starts to sizzle. Turn off the pan and after the pressure comes out, open it and add the rest of the water (1 liter), add the chopped potato into 1 cm cubes, the rice and cook for approximately 20 minutes. Taste and adjust the taste of salt.
- Again, it will be necessary to turn off the pan and wait for the pressure to release, then add the carrot and cook for another 5 minutes.
- Finish with parsley and serve with cereal bread and Parmesan cheese.
