- Butter3 tablespoon
- Potatoes2 unit(s)
- Chopped Onion1 unit(s)
- Minced garlic2 unit(s)
- Diced Zucchini1 unit(s)
- Water1 cup
- Milk3 cup
- Corn starch2 tablespoon
- Cream cheese200 g
- Vegetable broth1 unit(s)
- Salt and grated nutmeg to taste
- Grated Parmesan Cheese1 cup
- Chopped parsley and croutons for sprinkling to taste
- Heat the butter in a pan over medium heat and fry the onion and garlic for 2 minutes or until golden.
- Add the potatoes, zucchini, water, salt, nuts and cook until the vegetables are al dente. Add the cornstarch dissolved in the milk, the vegetable stock and cook until thickened, stirring.
- Add the curd, parmesan, season with salt and cook for 3 minutes. Remove, sprinkle with parsley, croutons and serve.
