- Whole milk200 ml
- Sugar to taste
- Salt to taste
- Caruru with bacon: bacon30 g
- White onion10 g
- Caruru leaf100 g
- Parmesan foam: finely grated Parmesan cheese50 g
- Milk100 ml
- Lecithin2 g
- Curau: cut the corn and beat it with milk.
- Strain and cook over low heat with the sugar and salt, until it reaches consistency.
- Caruru with bacon: finely chop the bacon and onion and sauté.
- Cook the pigeon pea in water and then sauté it with the previous mixture.
- Parmesan foam: put the cheese with the warm milk and the lecithin in a blender.
- Strain and whisk ninety to serve just the foam.
- In a deep dish, place the curau first, on top the pigeon pea sautéed with bacon, and finally the foam.
