- Water to cook the buchopor1 l

- Clean the stomach, removing the suet and put it to boil in a medium pot with water.
- Put lemon juice in the water with the vinegar
- Boil for about 10 minutes in a medium saucepan with water, lemon juice and vinegar.
- In a pressure cooker, put the oil/olive oil, the squeezed or pounded garlic, the chopped onion, the bacon, the pepperoni
- Let it fry for a few minutes in the meantime, drain the tripe and add to the pressure cooker.
- But first, chop the tripe into small pieces, the ideal is rectangles of 7cm X 3cm
- Let it sauté a little in the seasoning and add 1/2 liter of water and cover the pressure cooker.
- Let it cook for 30 minutes. If you don't find it cooked to your liking, add a little more water and return to the heat.
- Separately, sauté all the vegetables and cook on point. Don't let it cook too much so it doesn't fall apart when serving.
- If you want a thicker broth, just increase the amount of potatoes.
- Finally, cooked the tripe and vegetables, together in a larger pan, let it boil a little to unite the flavors and add salt and pepper to taste.
