- diced bacon300 g
- Olive100 g
- Chopped Tomato4 unit(s)
- Diced pepperoni2 unit(s)

- Green Smell to taste
- Salt1 tablespoon

- in a pan we are going to boil the tripe with the juice of 3 lemons and let it boil for 5 minutes, throw the water away and wash it, do this process 3 times boiling it with lemon juice for 5 minutes and washing it, in the last water put 5 leaves of laurel to boil together
- chop into small strips and set aside
- in a pressure cooker put the oil and sauté the crushed garlic with salt put the tripe to sauté together put the onion and black pepper cover the pan let it get pressure and cook for 20 minutes
- remove from the pan and book! in the same pan put the white fijao to cook with 3 bay leaves for 20 minutes
- in a large pan put the bacon and the pepperoni to fry, put more garlic and put the cooked tripe in the middle mix add the peppers, the corn and let it cook with 500 ml of water for 10 minutes
- put the beans together in the kitchen add 350 ml of tomato sauce with the olive oil and let it cook for another 15 minutes over medium heat
- put the tomato and onion let it cook for another 5 minutes put the green smell and turn off the fire our recipe is ready
- serve with a little pepper if you like
