- Mozzarella100 g
- Chopped Onion1/2 unit(s)
- Minced Garlic Cloves2 unit(s)
- Salt to taste
- Black pepper to taste
- Sweet paprika to taste
- Saffron1 coffee spoon
- Grated Parmesan Cheese4 tablespoon
- Green Smell to taste
- Olive oil1 tablespoon
- Milk1 cup
- In a pressure cooker, heat the oil and sauté the onion and garlic.
- When it starts to brown, add the peeled and cubed potato. Season with salt, pepper, paprika and turmeric. Let it cool for a few minutes.
- Add 2 cups of water and close the pan. Cook under pressure for 7 minutes.
- Open the pan and mash the potatoes. Add milk, mozzarella and 2 tablespoons of Parmesan and let it thicken a little.
- Serve with slices or cubes of avocado, toasted corn with mustard and honey, sprinkle with parmesan and parsley.
- Tips: at meetings or parties, you can serve it in mugs, finger food style. You can use cilantro instead of parsley!
