- Crumb of 2 French breads2 unit(s)
- Olive oil3 tablespoon
- Vinegar1 tablespoon
- Cold water500 ml
- Spicy paprika for garnish1 coffee spoon
- Cucumber in cubes for garnish1 coffee spoon
- Remove the hard crust from the bread, leaving only the crumb. Peel the cucumber. Set aside half to cut into cubes and decorate the plate.
- Place all ingredients in a blender, add a generous pinch of salt and blend until smooth and creamy.
- Strain the cream and transfer to a bowl, keep in the fridge until serving.
- Serve in a deep dish, garnish with paprika, diced cucumber and a drizzle of olive oil.
