- unsalted butter2 tablespoon
- Chopped small onion1 unit(s)
- Maizena2 tablespoon
- Chicken broth2 cup
- Whole milk1/2 cup
- medium potato4 unit(s)
- Chopped cheddar cheese1/2 cup
- Sour cream1/2 cup
- chopped bacon (optional) to taste
- Salt to taste
- Pepper to taste
- Melt the butter in a pan over medium heat (180°).
- Add the onion and cook for a few minutes until the onion is soft and fragrant.
- Sprinkle in the flour and stir well before continuing to cook for a few more minutes, until the flour is completely incorporated.
- Add the chicken stock and milk, followed by the cubed potatoes. Increase the heat so the mixture boils and cook until the potatoes are tender, about 15 minutes.
- Using a blender or spoon, blend the soup until it has a uniform texture.
- Add cheddar cheese, seasonings like salt and pepper, and enough sour cream until you get the consistency you want.
- Serve on plates and if desired add the chopped bacon.
