- Cabotiá pumpkin, cut into cubes650 g
- Chopped Onion1/2 unit(s)
- Garlic Clove1 unit(s)
- Chopped tomato1 unit(s)
- Powdered or freshly grated ginger1/2 teaspoon
- Black Pepper to taste
- Grated Parmesan Cheese1 tablespoon
- Olive oil1 dessert spoon
- Put 1 cup of water to heat.
- In a pressure cooker, heat the oil and sauté the onion and garlic until it starts to brown. Add the tomato and sauté for another 1 minute.
- Add the peeled and cubed pumpkin, season with salt and pepper. Add enough hot water to cover the pumpkins. Cover the pan and when it gives pressure count 10 minutes.
- Turn off the fire, let the pressure release and hit everything in the blender.
- Add the grated ginger and mix well.
- Sprinkle with grated Parmesan cheese and parsley to taste.
- Tip: for the meal to be complete, add a protein such as ground beef, chicken, boiled eggs or fresh Minas cheese. It's a delight!
