- Ripe tomatoes2 kg
- Chopped red onion1 unit(s)
- grated carrot1 unit(s)
- Olive oil3 tablespoon
- Balsamic Vinegar1 tablespoon
- Salt and pepper to taste
- Basil to taste
- Preheat the oven to 170 degrees. Wash the tomatoes, cut in four and remove the seeds. Place them on a baking sheet, cut side up, in a single layer. Spread the onion pieces and garlic cloves. Drizzle with olive oil, balsamic vinegar. Season with salt and pepper. Bake in the oven for 1 hour, or until the tomatoes are wilted and the edges are lightly toasted. Remove from the oven and add the basil leaves. Let cool. Once cold, hit the blender with a glass of water. Beat well until it forms a homogeneous cream. Return to heat in a pan and bring to a boil. Check salt and pepper. Garnish with basil leaves or parsley. And it's ready 😋😋
