- Portuguese sausage200 g
- Potatoes500 g
- Beef broth1 l
- Cabbage1/2 unit(s)
- Onion100 g
- Garlic5 g
- Black pepper to taste
- Salt to taste
- Olive oil15 ml
- Peel the skin off the sausage, cut into small cubes and set aside.
- Peel the potato and cut it coarsely. Cut onion and mince garlic.
- In a pan, sauté the sausage until golden. Remove and reserve.
- In the same pan, sauté the garlic and onion in oil. Add the potatoes and beef broth.
- Let them cook until they almost fall apart. Reserve the broth and with a fork or fuet, puree the potatoes, then return with the beef broth and cook on low heat with the sausages.
- Remove the stems from the cabbage, roll them up and cut into thin strips, and also lengthwise, so it doesn't look like kale spaghetti. Add to broth.
- Serve with a drizzle of olive oil and a good slice of rustic or homemade bread.
