- Mixed Quinoa50 g
- Portobello mushroom100 g
- Baroa Potato200 g
- Carrot100 g
- Kale1/2 unit(s)
- Vegetable broth1 l
- Grated Ginger1 tablespoon
- Saffron1 tablespoon
- In a pan add a drizzle of olive oil and saute the chopped onion and garlic
- Then add the sliced mushroom (it can be another type of mushroom or you can replace it with another protein)
- Add the carrots and potatoes cut into cubes. Grated ginger and saffron and quinoa.
- Add the vegetable broth and cover the pan and cook for 20 minutes.
- Finish with finely sliced kale and season with salt and pepper.
