- Cashew nuts soaked in water for 4 hours1/2 cup
- Lemon1 unit(s)
- Garlic1 unit(s)
- Salt and pepper to taste
- Wash the carrots, scrape the skin. Make strips imitating wide noodles with the food peeler itself.
- Fill a pan with water and place the carrot strips and bring to a boil for 3 minutes. Drain and reserve.
- Throw out the water just soak the cashews, wash them well.
- Place the washed cashew nuts in a blender with 1 cup of water and blend until it forms a thick liquid like a cream.
- Chop the garlic and put it in a large skillet with olive oil and touch it until it starts to brown.
- Add the pre-cooked carrot and stir to get the flavor. Saute for 3 minutes. Squeeze the juice of half a lemon, sprinkle with salt and pepper.
- Add the cashew nut milk cream and stir.
- Finish with lemon zest.
