- Cooked chickpeas180 g
- Golden (or regular) flaxseed meal6 tablespoon
- Olive oil2 tablespoon
- Salt1 teaspoon
- Mash the chickpeas (I used a food processor) until it turns into a paste and add the flour, oil and salt and stir well until incorporated (it's easier with your hands).
- Divide the dough into 5 parts and open each part into mini molds.
- Bake the tartlets for 20 minutes in an oven at 200° (preheated for 5 minutes at the same temperature.
- Unmold and add the stuffing of your choice (add the stuffing only when eating so as not to soften the dough).
- Stuffing suggestion: Sauté an onion in a little oil, chopped into very thin half moons, until translucent. Add a grated carrot, season with salt and pepper and add 1 tablespoon of balsamic vinegar and saute for 10 minutes, stirring occasionally to prevent sticking. It also matches if you put a little guacamole on top of that stuffing.
