- Chickpeas1 cup
- Oat flour or wheat flour or rice flour1/2 cup
- grated carrot1/3 cup
- Saffron1/2 teaspoon
- Chopped Onion1/2 unit(s)
- Olive oil or coconut oil3 tablespoon
- Coriander and chives0 to taste
- Black pepper0 to taste
- Salt0 to taste
- Soak the chickpeas overnight and change the water a few times. Wash well and place in the pressure cooker and cook for 20 minutes after getting pressure. Wait for the pressure to release and drain the water. In a blender or food processor add the chickpeas, onion, salt, saffron and olive oil, beat well until obtaining a homogeneous paste. Transfer to a bowl and add the carrots, herbs and black pepper. Mix well, add the oats and stir again. Transfer the dough to the fridge and leave for at least 20 minutes. Then grease your hands with olive oil and shape the hamburgers, cut squares of parchment paper (or plastic wrap) and place one on top of the other between the hamburgers so they don't stick. Leave in the freezer for at least 30 minutes. In a non-stick skillet or greased with olive oil, brown the chickpea burgers on both sides and serve them immediately, or pack them and freeze them for up to three months.
