- Demerara sugar120 g
- Cocoa50 g
- Coconut oil80 ml
- Coconut milk120 ml
- Yeast14 g
- Vanilla Extract1 teaspoon
- Salt1/2 teaspoon
- Very Ripe Banana1 unit(s)
- Fresh coffee80 ml
- Preheat the oven to 180° and grease a mold of your choice.
- Mix the flour and cocoa in a bowl.
- Mash the banana. Add the milk, coffee, oil, sugar and mashed banana in another bowl. Mix well.
- Pour the mixture into the flour bowl and stir to combine the ingredients well.
- Add vanilla and yeast and mix.
- Place in the oven and bake for about 40 minutes, or test with a toothpick to check for doneness.
