- Cooked Butter Beans3/4 cup
- Eggplant cut into small cubes2 cup
- Diced red and yellow bell pepper1/2 cup
- Chopped Onion1/3 cup
- Chopped Garlic1 dessert spoon
- Pitted green olives12 unit(s)
- Olive oil1/4 cup
- Sea Salt to taste
- Ground black pepper to taste
- Mix all the ingredients in a baking dish and place in a preheated oven at 220ÂșC to bake for about 25 minutes (stir a few times during this time to avoid burning).
- Remove from the oven, let cool and transfer to a container, cover with olive oil, cover and refrigerate for at least 4 hours before serving, ideally overnight.
