- Eggplant cut into medium cubes1.5 kg
- Red bell pepper cut into strips1/2 cup
- Yellow bell pepper cut into strips1/2 cup
- Chopped Onion3/4 cup
- Chopped Garlic1 tablespoon
- Chopped Parsley1 dessert spoon
- Olive oil100 ml
- Sea Salt to taste
- Red Wine Vinegar1 dessert spoon
- Coarsely chopped walnuts1/3 cup
- In a mold, mix all the ingredients well and place in a preheated oven at 220ÂșC to bake for about 30 minutes.
- Stir the caponata a few times during preparation.
- Transfer to another container and serve warm or cold.
