  • Oat flour1.5 cup
  • Cocoa powder (or chocolate if you like it sweeter)1/4 cup
  • Brown sugar (or demerara / cristal if you like it sweeter)3/4 cup
  • Baking soda1/2 tablespoon
  • Vegetable oil1/4 cup
  • Plant milk (or water)1 cup
  • Alcohol Vinegar (or Apple Cider Vinegar)1/2 tablespoon
  • Yeast1 tablespoon
  • Coconut milk (bottle)1 unit(s)
  • Grated coconut (if you like it sweet, buy it sweetened)1 unit(s)
  1. Mix all the dry ingredients, with the exception of the yeast (interesting if you sieve it).
  2. Add the milk, oil and vinegar and mix well until a homogeneous mixture is formed.
  3. Add the yeast and stir until incorporated.
  4. Place in greased or silicone loaf pan and bake in a preheated oven (180°) for 45 minutes (do the toothpick test).
  5. For the filling: mix the coconut milk with the grated coconut in a pan and stir over low heat until it thickens (takes about 5 minutes). If you like it sweeter, you can add 1 tablespoon of granulated or refined sugar.
  6. For assembly: tear the cake apart and intersperse layers of cake and filling in a glass as you prefer!
