- Oat flour1.5 cup
- Cocoa powder (or chocolate if you like it sweeter)1/4 cup
- Brown sugar (or demerara / cristal if you like it sweeter)3/4 cup
- Baking soda1/2 tablespoon
- Vegetable oil1/4 cup
- Plant milk (or water)1 cup
- Alcohol Vinegar (or Apple Cider Vinegar)1/2 tablespoon
- Yeast1 tablespoon
- Coconut milk (bottle)1 unit(s)
- Grated coconut (if you like it sweet, buy it sweetened)1 unit(s)
- Mix all the dry ingredients, with the exception of the yeast (interesting if you sieve it).
- Add the milk, oil and vinegar and mix well until a homogeneous mixture is formed.
- Add the yeast and stir until incorporated.
- Place in greased or silicone loaf pan and bake in a preheated oven (180°) for 45 minutes (do the toothpick test).
- For the filling: mix the coconut milk with the grated coconut in a pan and stir over low heat until it thickens (takes about 5 minutes). If you like it sweeter, you can add 1 tablespoon of granulated or refined sugar.
- For assembly: tear the cake apart and intersperse layers of cake and filling in a glass as you prefer!
