- Wash, dry and cut the tomato into 8 sections, cut and discard the lid; place the cut part on the board and cut the tomato in a cross, then in an X, to form 8 parts. Place in a sieve, mix with 1 teaspoon of salt and let it drain over a bowl for at least 30 minutes, the salt dehydrates and makes the tomato fleshier. Meanwhile, prepare the other ingredients, peel and cut the onion into medium cubes. Transfer to a bowl, cover with water and ice and leave to soak until it's time to assemble the salad, the ice water reduces the onion's heat. Wash and dry the cucumber. With the tip of a fork, scrape the skin lengthwise, the grooves retain the sauce and the cucumber is well seasoned. Cut the cucumber in half and the halves into 1 cm half moons. Cut the tofu into cubes of about 2 cm. Cut the olives into slices and discard the pit. Transfer the drained tomato to a bowl. Drain the water from the onions and add to the tomatoes. Mix the sliced cucumber, the olives and finally the tofu cubes. Season with plenty of olive oil and freshly ground black pepper to taste, remember that the tomato has already been sprinkled with salt and the tofu has also been marinated. Serve and bon appetit!
