- Tahini1 tablespoon
- Water2 tablespoon
- Lemon juice1/2 unit(s)
- Garlic Clove1 unit(s)
- Extra Virgin Olive Oil2 tablespoon
- Roasted Pumpkin Seeds1 dessert spoon
- Green leaves to taste
- for the Taratour In a bowl add the tahini, water and mix well. Remove the core of the garlic clove and finely chop or grate. Add a pinch of salt and knead well until you get a paste. Add part of this paste to the tahini mixture and also the juice and mix well with a fork. Taste and correct acidity, flavor and consistency if necessary.
- Cut a 2-inch thick slice of cauliflower using the center stalk to hold everything together and season with salt and pepper on both sides. In a skillet over medium/low heat, add the extra virgin olive oil and cauliflower. Gently brown for 10 minutes or until golden brown. Flip and leave for another 5 minutes.
- Serve hot with a salad of leaves, drizzle with the taratour sauce, sprinkle with some toasted pumpkin seeds and enjoy.
