- Cut all the ingredients into small pieces to mix the flavor
- When you cut the apple, soak it in the squeezed lemon so it doesn't spoil.
- For the cashew nut mayonnaise: soak the nuts in boiling water for 10 minutes. Discard the water and in a food processor or blender, place the chestnuts, lemon, water and chopped leek, adding salt if you wish, and blend until a paste forms.
- Finally, mix all the ingredients together with the mayonnaise in a large bowl and let it rest in the fridge for a while before serving.
