Lentil “Bolognese” with Mushrooms

- Lentil (already soaked for 6 hours)250 g
- Fresh Shiitake Mushroom300 g
- Onion1 unit(s)
- Peeled tomatoes with tomato juice or sauce (can)400 g
- Olive oil2 tablespoon
- Seasonings (black pepper, oregano, cumin, smoked paprika, chili pepper, cayenne pepper) to taste
- Green seasoning (parsley and chives) to taste
- Salt1/2 tablespoon
- Garlic Clove2 unit(s)
- Chop the onion and garlic into small cubes, and the shiitake into slices.
- Heat a large skillet or pan, and sauté the onion in olive oil. Then add the garlic, sauté for 1 min, and then the mushrooms. At this point, you can add the dry seasonings and salt.
- Then add the tomato sauce and another ½ cup of water. When it starts to boil, add the lentil that was already soaking. It will cook quickly, in about 5 min.
- Taste and adjust the seasoning, if necessary, and top off with the fresh herbs. You can also add chopped olives which is delicious.
- For the accompaniment, there is a suggestion of mashed potatoes with turmeric. Cook potato pieces in boiling salted water. When it is soft, remove the water, add a spoon of ghee, salt, black pepper and turmeric, and beat everything with the hand mixer.
