- Medium Italian Zucchini2 unit(s)
- Chopped tomato2 unit(s)
- Crushed Garlic Clove2 unit(s)
- Extra Virgin Olive Oil to taste
- Salt to taste
- Sicilian lemon to taste
- Oregano to taste
- Ground black pepper to taste
- Wash and dry the zucchinis well and remove the stalk.
- Pass the zucchinis on the grater or use the spaghetti maker
- In a small pan, put a drizzle of oil and sauté the garlic.
- Add the zucchinis, the chopped tomato and mix well.
- Put some squeezed Sicilian lemon
- Grate some of the lemon zest over the pasta and let it cook.
- Add little salt, ground black pepper and oregano
- Try it and when it is Al dente, turn off the heat and serve immediately.
- Combines with croutons and vegan tostadas with avocado 😋👌
