- Diced Mango2 cup
- Coconut milk1 cup
- Cane molasses2 tablespoon
- Corn starch2 tablespoon
- Agar-agar powder2 teaspoon
- Lemon (zest and juice)1 unit(s)
- Passion Fruit Juice3 tablespoon
- Place the cubed mango, coconut milk and cane molasses in a blender and blend for a few seconds or until smooth. Taste and adjust the molasses to your liking.
- Transfer to a medium saucepan. Add the cornstarch, agar-agar, lemon juice and zest to the pan. Whisk to dissolve the cornstarch and agar.
- Heat over medium heat, stirring constantly until boiling. After boiling, remove from heat and add passion fruit juice. Let cool 2-3 minutes before pouring into pans or ramekins.
- Let cool at room temperature for about 10-15 minutes before transferring to the fridge. Leave in the fridge for at least six hours before eating.
