- Cook the cassava until it is very soft, almost melting. Drain and save a cup of the cooking water. It contains starch and will help to puree it.
- Mash the manioc with a fork. Put it in a pan, add the water and the butter and mix everything until the butter melts well. Ideally, the puree should have a very smooth consistency. serve right away
