- Cooked brown rice3 cup
- Chopped Onion1/2 cup
- Chopped Leek1/3 cup
- Diced red and yellow bell pepper1/4 cup
- grated carrot3/4 cup
- Boiled corn1/3 cup
- Fresh peas1/3 cup
- Chopped Spinach1/2 cup
- Chopped Parsley1 tablespoon
- Olive oil1 tablespoon
- Salt to taste
- In a pan, heat the oil and sauté the onion, leek and peppers until wilted.
- Add the carrot, corn, season with salt and mix. Stir until the carrot is cooked.
- Add the rice, peas, parsley and spinach, mix, adjust salt and cook for 2 minutes (stirring constantly). Serve immediately.
