- First time I made this preserve and I really liked the result, it is sour and with a sweet touch. I used about 15 medium sized radishes. After washing well in running water I sliced them using a mandolin. After he cut it into thin slices, I put a tablespoon of salt, mixed well and let the water drain for 45 minutes. In a pan I put 200ml of rice vinegar, 200ml of water, a teaspoon of unsalted salt and two tablespoons of sugar and left it on the fire until it starts to boil. After 45 minutes of draining, I took the radishes, squeezed them well in my hands to remove all the salt water and put them in already sterilized pots. I added black peppercorns and added the vinegar and water mixture while it was still hot. Then just cover and let it enjoy in the fridge for two to three days and that's it. Just taste this wonder lol...
