- Coconut Milk200 ml
- Coconut Sugar to taste
- Mint to taste
- Grind the pineapple in a food processor or blender along with the coconut milk and mint. Sweeten to taste. Continue mixing in a food processor or blender until the cream is smooth.
- Serve immediately or, for a more consistent texture, return to the freezer for at least 1 hour. In this case, I advise you to remove it from the freezer a few minutes before serving, to make it more creamy.
