- Corn (frozen sachet use)300 g

- Salt and Seasoning* to taste
- Cut the onion and garlic into small cubes. Remove half of the pepper seeds and also cut into cubes. Remove the white part of the pepper and cut in the same way. Remove the seeds from the tomato and also cut into cubes.
- Start by sautéing the onion, garlic, pepper and seasonings in a little oil until golden. Add the peppers, tomatoes, corn and beans and mix well. Then add the tomato sauce and water, stir well and add a little more salt. Add the quinoa, close the pan and let it cook for 20 minutes, stirring frequently so the quinoa doesn't stick to the bottom of the pan.
- *I used 1 tsp of smoked paprika, 1 tsp of coriander powder and 1 tsp of turmeric. I also finished with fresh basil.
