- Cut 1 tomato, zucchini and eggplant into 0.5cm slices and assemble in a glass marinex, interspersing the vegetables, with sliced onions and sliced garlic on a mandoline.
- Take 2 tomatoes and chop them into cubes, in a pan sauté 3 cloves of garlic laminated with 1/3 of the chopped onion, add the tomato, 1/2 cup of water, adjust the salt and let it cook on low heat until it breaks down. Finish the sauce with fresh basil and set aside.
- Drizzle the vegetables with plenty of olive oil and oregano and add the homemade tomato sauce, put in a preheated oven at 180 degrees for 15 minutes with aluminum foil.
