- Sago150 g
- Strained passion fruit juice80 ml
- Red onion, diced2 unit(s)
- Red bell pepper in small cubes1 unit(s)
- Chopped seedless pepper1 unit(s)
- Chopped coriander1/2 unit(s)
- Mint1/4 unit(s)
- Olive oil150 ml
- Salt to taste
- Soak the sago in twice as much water for 30 minutes. Drain and cook in an uncovered pan for 15-20 minutes, stirring constantly so it doesn't stick to the bottom. When translucent, drain and run cold water to stop the cooking and remove excess starch.
- In a bowl, mix the other ingredients and the sago and mix well so that the oil emulsifies with the passion fruit juice. Serve at room temperature.
