- Organic Yeast20 g
- Wheat flour3 cup
- Salt1 coffee spoon
- Sugar1 coffee spoon
- Warm water2 cup
- Garlic (clove)3 unit(s)
- Onion1 unit(s)
- Eggplant or other vegetable1 unit(s)
- Textured Soy Protein Bolognese (PTS)1 cup
- Oil1/3 cup
- In a bowl add the warm water, sugar and yeast. Let rest 10 min. (The water can't be hot if it doesn't inactivate the yeast).
- After the yeast is activated, add the oil, flour and salt and stir, there should be a soft dough that you can move with a spoon. Let it rest for 30 min with a clean cloth on top to maintain the temperature and help it rise.
- Meanwhile, preheat the oven to 180°C. Grease the mold with oil and wheat flour. Fry the garlic, onion and eggplant or your favorite vegetable, season to taste, then add the soy protein bolognese, mix and set aside.
- After 30 min, when the dough has risen, place it in the greased shape, spread the vegetables with the bolognese on top and bake for 40 min. Then unmold and serve while still hot.
