- Soaked black beans500 g
- Chopped Onion1/2 cup
- Chopped Garlic1 dessert spoon
- Bay leaf1 unit(s)
- Olive oil1 tablespoon
- Carrot cut into 3cm slices1.5 unit(s)
- Peeled pumpkin, cut into medium cubes2 cup
- Chuchu cut into medium cubes1.5 cup
- Peeled sweet potato, cut into 2cm slices1 cup
- Chopped green onion1/4 cup
- Salt to taste
- Ground black pepper to taste
- In a pressure cooker add the beans and bay leaf. Cover with water and close the pan.
- Take to the fire to cook for 15 minutes after opening pressure.
- In a pan heat the oil and brown the onion and garlic.
- Add 2 shells of already cooked bean grains to the sauté pan and mix well.
- Add the remaining beans to the pan, season with salt, pepper and mix. Add more water if necessary.
- Add the sweet potato and chayote and cook until al dente.
- Add the pumpkin and carrot and cook until all the vegetables are fully cooked, add more water if necessary. Adjust the salt.
- Finish with the green onion and serve immediately.
