- seasonings: black pepper, smoked paprika, garlic and dried herbs to taste
- We start by preparing the soy and for that we cover it with water and bring it to a boil with the squeezed lemon. When it boils, let it soak for 20 minutes. Then drain it until as much water comes out, this will let it absorb the spices
- Now take the 2 tbsp of chia and let it soak for 5 minutes with water. Meanwhile, sauté the chopped onion in oil until golden. Then, beat the sauteed onion and soy, the gel that the chia will have formed and the seasonings.
- When you turn a very homogeneous dough, pass it to a pot and add the flour. Mix it with your hand until it gets very dry. Take it to the fridge for about 10 minutes just to make it easier to shape.
- Remove from the fridge and then just mold the meatballs and bake at 180°c for 30min, turning them halfway through. I put them in the homemade tomato sauce I made and ate them with pasta.
