- Tapioca200 g
- Carrot1 unit(s)
- Italian Zucchini1 unit(s)
- White onion1/2 unit(s)
- Tomato1/2 unit(s)
- Garlic1 unit(s)
- Chopped Parsley1 dessert spoon
- Hydrated chickpeas1 cup
- Tahini1/2 tablespoon
- Lemon juice1 dessert spoon
- Extra Virgin Olive Oil1/2 cup
- Ice3 unit(s)
- Hummus: Soak the chickpeas for 12 hours. Discard the water. Cook the chickpeas in another water until cooked. Reserve. Fry the garlic in a drizzle of oil, set aside. Mix all the ingredients and gradually add the ice. Leave in a pasty consistency. Reserve
- Cut the carrots and zucchini into spaghetti. In a pan, boil the water and give the zucchini a shock: 20 seconds and the carrot, 2 minutes. In another skillet, sauté the garlic and onion and then the tomato. Put the vegetables. Saute a little and finish with the chives, salt and pepper to taste. Reserve.
- In a heated skillet, make the tapioca disc and reserve.
- MOUNTING: Spread the hummus in the tapioca and stuff it with the vegetables.
