- Flour 00270 g
- White wine65 ml
- Olive oil75 ml
- Salt10 g
- Fennel seed10 g
- In a pot put 270g of flour 00
- Add salt and fennel seeds
- Make a hole in the middle and pour the white wine into it.
- Start mixing and slowly add the olive oil
- Knead the dough until smooth
- Put the dough in the fridge for 30 min.
- Remove the dough from the fridge. Take pieces of dough and make small rolls with them.
- Join the two ends of the rolls
- Put water in a deep pan and let it boil. Place the rolls in the boiling water. Take the rolls out of the water when they float. (1 minute and a half)
- Place the boiled cookies on a towel to dry. Let it dry for a while (preferably overnight, but 2 hours is enough). The longer they dry, the more crumbly (friabile) the cookie will be.
- Preheat oven to 180 degrees C for 10 min. Bake the cookies for 30 minutes.
- Let cool and eat!
