- Flaxseed Flour1 tablespoon
- Water3 tablespoon
- Wheat flour1.25 cup
- Sugar3 tablespoon
- Chemical Yeast1 tablespoon
- Cinnamon to taste
- Salt1/4 coffee spoon
- Almond milk0.75 cup
- Coconut oil (for frying) to taste
- Mix the flaxseed meal with the water and let the mixture rest for 5 minutes. This mixture forms a “gel”, and is the substitute for the egg in this recipe.
- In a bowl, add the flour, sugar, yeast, cinnamon and salt. Mix
- Add almond milk and flaxseed mixture. Mix until the dough is homogeneous
- In a skillet, heat the coconut oil. Pour 1/4 of the batter into the skillet at a time. When the dough starts to form small bubbles, turn the dough on its side.
- Serve immediately with the syrup and fruit of your choice.
