- For the meatballs: Soy protein1 cup

- For the rice: Brown rice1 cup

- Potatoes300 g
- Sliced Tomatoes1 unit(s)
- Sliced cucumber1/2 unit(s)
- I like to make brown rice in the pressure cooker, it's faster, I sauteed garlic and onion in olive oil, added the rice, salt, pepper, enough water to cover the rice. Cover the pan and let it cook for 10 minutes under pressure.
- After all the pressure is gone, I leave the rice for another 10 minutes in the fire without the lid, until all the water dries up and it becomes soft, I finish with chopped parsley. Stay soft and tasty.
- To make the meatballs, I soak the soy for 1 hour, then drain all the water and squeeze to remove the excess. In a pan I sauté the seasonings, add the soy a little water and let it cook for 15 minutes, I leave it very dry. I pass the cooked soybeans in the processor, mix the oats, linseed, make balls. For the meatballs to stay firm and not fall apart in the sauce, I like to fry them in the airfryer, it's quick and you don't need to add oil.
- After frying the meatballs, I mix them with the homemade sauce that I prepare with tomatoes, basil, parsley, olive oil, salt. It's very fresh and delicious.
- I like to cook the potatoes whole and in their skins with water and salt until they are soft, then I mash them up and fry them in a pan with a drizzle of olive oil, let them brown on both sides and finish with fried garlic and parsley.
- The salad is very simple, just tomato, cucumber, salt and vinegar.
