- cashew nuts1 cup
- water250 ml
- demerara sugar3/4 cup
- coconut sugar1/4 cup
- vanilla extract2 tablespoon
- Boil the chestnuts in water for 15 minutes, discard this water and wash well.
- Beat the chestnuts in the blender with the rest of the ingredients, until a very smooth cream is formed.
- Transfer to a pan and stir over medium/low heat, until a thicker cream forms. After it cools, it gets even firmer.
