- Rice Flour1 cup
- Chickpea Flour1/2 cup
- Potato Starch1/2 cup
- Boiled Yam2 tablespoon
- Flaxseed Flour2 tablespoon
- Orange Juice1 cup
- Vegetable Milk1 cup
- Coconut Oil1/2 cup
- Apple Cider Vinegar1 tablespoon
- Sodium Bicarbonate1 coffee spoon
- Chemical Yeast1 tablespoon
- Lemon Zest to taste
- Demerara sugar1 cup
- Corn starch2 tablespoon
- Demerara sugar for the syrup2 tablespoon
- Sift the flours
- Mix the dry ingredients, minus the yeast and starch
- Mix the mashed yam
- Mix coconut oil
- Mix 1/2 cup of orange juice
- Add 1/2 cup of vegetable milk, add vinegar and yeast. Gently mix
- Put in greased shape and take it to the preheated oven at 180 degrees for 30 min.
- Test with a toothpick if it is baked
- Let cool
- make the syrup
- Mix the milk, juice, starch and sugar.
- Cook over low heat, stirring constantly, until thickened.
- Spread over the cake
