- Palm oil2 tablespoon
- Onion slices1 unit(s)
- Minced Garlic Cloves2 unit(s)
- Red Seedless Bell Peppers1 unit(s)
- Sliced Tomatoes2 unit(s)
- Chopped plantains4 unit(s)
- Coconut milk400 ml
- Heated vegetable broth200 ml
- Canned palm hearts in slices5 unit(s)
- Salt to taste
- Black pepper to taste
- Chopped coriander1/4 cup
- Chopped Parsley1/4 cup
- Lemon juice1/2 unit(s)
- In a large pan, heat the palm oil. Add the onion and garlic. Saute until golden
- Add the peppers, tomatoes and plantains. saute
- Add coconut milk and vegetable broth. Add salt and pepper. Cover the pan and cook on medium heat for 25 minutes, or until the banana is cooked through.
- Add the canned palmiyo and turn off the heat. Mix
- Add cilantro and parsley. Fix the salt. Mix well. Finish with lemon juice
- Suggestion: serve with white rice and farofa
