- Salt1 to taste
- Black pepper1 to taste
- Parsley1 to taste

- Soak the potatoes in water for half an hour and scrub them with a brush.
- Cook them in water until they are soft.
- Mix all the sauce ingredients
- Choose a large jar with a lid, or a serving dish with a lid.
- Place the potatoes and top with the vinaigrette.
- Taste and season with enough salt.
- Place in the fridge until cool before serving.
