- Whole zucchini300 kg
- cherry tomato400 g
- Soy protein (buy the lighter one)100 g
- Chopped Onion50 g
- Minced garlic10 g
- Olive oil30 g
- Salt to taste10 g
- Chopped Parsley50 g
- Take a pan add 500ml of water and the soy protein, let it cook until all the water is completely dry.
- Add plenty of oil, onion and garlic and sauté together with the protein.
- Add the oregano, salt and a little water and let it cook.
- Chop the parsley and add to the sauce. Stir, turn off the heat and set aside.
- Make the zucchini blades with the mandoline, if you don't have it, do it with the knife. Season with salt, garlic, olive oil and oregano. Microwave for about 15 to 20 seconds, it needs to be firm.
- Assembling the plate..... Take a deep dish, put the sauce, on top put the zucchini in the shape of (S), and finish with chopped parsley on top.
