Zucchini stuffed with tofu and spices

- Tofu200 g
- Soy sauce (Shoyu)4 tablespoon
- medium tomato1 unit(s)
- Olive oil4 tablespoon
- Oregano1 to taste
- Salt1 to taste
- Cut the zucchinis and cook in boiling water with a little salt for 5 minutes just so they can soften a little. Once this is done, remove from the water and with a spoon carefully remove the center of the zucchini forming "canoes" and set aside. To flavor the Tofu, cut slices of the cheese and soak in the soyu. After the shoyu is completely absorbed, cut the Tofu into small squares, as well as the onion and tomato. In a skillet, sauté the onion together with the oil and salt until golden. Once this is done, add the Tofu squares along with the remaining soy sauce. Saute this mixture for a few minutes. Then add what's left of the zucchini center and the tomato.
- Assembly: in a frying pan, organize the zucchini "canoes" and put the stuffing inside. To finish, water each canoe with a little oil and add oregano. Your dish is ready!
