- Vinegar200 ml
- Beaten egg1 unit(s)
- Breadcrumbs2 cup
- Oil for deep frying300 ml
- Salt to taste
- Black pepper to taste
- Cut the eggplant into slices.
- In a bowl, soak the slices in water with vinegar and salt for half an hour to remove the bitterness.
- Drain the eggplant.
- Season the eggplant, beaten egg and breadcrumbs with salt and pepper.
- Dip the slices in the beaten egg and seasoned breadcrumbs.
- Fry by immersing yourself in very hot oil.
- Serve as an accompaniment to a main dish or enjoy as a snack.
