  • Cooked Chickpeas2 cup
  • Sugar1 cup
  • Lemon Peel Zest1 tablespoon
  • Cinnamon Powder2 teaspoon
  • Egg Yolk1 unit(s)
  • Wheat Flour2 cup
  • Butter5 tablespoon
  • Rum or white wine to taste30 ml
  • Salt to taste
  • Oil for frying2 cup
  • Cinnamon stick for garnish to taste
  1. Pass the chickpeas through a sieve and mix half the sugar, lemon zest, half the cinnamon powder and the yolk.
  2. Cook over low heat, stirring constantly, until it unglued from the bottom of the pan. Remove from heat and set aside.
  3. In a bowl, mix the wheat flour, butter, rum or white wine, salt and add 15 ml of water. Knead the dough until smooth, roll out and cut into circles of 8 to 10 cm in diameter.
  4. Distribute the filling, close like a pastel and fry in hot oil until golden. Remove and coat in the rest of the sugar and cinnamon powder.
  5. Serve garnished with cinnamon stick.
