- Cooked Chickpeas2 cup
- Sugar1 cup
- Lemon Peel Zest1 tablespoon
- Cinnamon Powder2 teaspoon
- Egg Yolk1 unit(s)
- Wheat Flour2 cup
- Butter5 tablespoon
- Rum or white wine to taste30 ml
- Salt to taste
- Oil for frying2 cup
- Cinnamon stick for garnish to taste
- Pass the chickpeas through a sieve and mix half the sugar, lemon zest, half the cinnamon powder and the yolk.
- Cook over low heat, stirring constantly, until it unglued from the bottom of the pan. Remove from heat and set aside.
- In a bowl, mix the wheat flour, butter, rum or white wine, salt and add 15 ml of water. Knead the dough until smooth, roll out and cut into circles of 8 to 10 cm in diameter.
- Distribute the filling, close like a pastel and fry in hot oil until golden. Remove and coat in the rest of the sugar and cinnamon powder.
- Serve garnished with cinnamon stick.
