Balsamic caramelized eggplant

  • medium eggplant1 unit(s)
  • Honey1 dessert spoon
  • Balsamic Vinegar1 teaspoon
  • Salt to taste
  • Chopped Basil Leaves5 unit(s)
  • Oil of your choice2 tablespoon
  1. Cut the eggplant into 1/2 cm slices
  2. In a hot skillet over medium heat, add a tablespoon of the oil, the eggplant and brown one side.
  3. Turn the slices, add another tablespoon of oil and let the other side brown.
  4. Add the honey spreading over the eggplant slices and at the bottom of the skillet, turn off the heat immediately and sauté to impregnate the honey.
  5. Add the balsamic vinegar, sauté a little more to stir. Season with salt and sprinkle the basil on top.
  6. Serve warm or at room temperature.
